Walking tour of the area Meet with small-scale fishermen to discover various types of fresh seafood available. Cooking demonstration of traditional seafood dishes and seasonal delicacies Evening meze covering the main ingredients of seasonal Cretan cuisine, including olive oil variations and varieties of olives, roast lamb, vegetable stews, rustic pastries, homemade cheese and wild flower honey varieties Day 2: Lassithi, Southern Gate: Sustenance Organic Gardening, Traditional Bread Baking Travel to the edge of the Lassithi plateau near the village of Kritsa Meet with local farmers to tour their gardens and discuss cultivation and varieties Traditional bread baking demo in the outdoor wood burning oven: Dakos, the Cretan staff of life. Traditional cheese making demo along with other seasonal specialties Meze in the village with the farmers Visit an olive oil production museum Return to Elounda at approximately 5:00 pm. Evening free to relax. Day 3: Northern Coast of Lassithi, Visit Small Villages and Collect Wild Greens Walking tour of the area to identify and collect wild greens (horta), their usage in ancient and modern medicine and cooking Hand made phyllo dough demonstration with a fabulous local chef using horta and fresh cheese Cooking demo and participation class of additional meze we will enjoy Return to Elounda at approximately 5:00 pm. Evening free. Day 4: Lassithi, Northern Region, Hike to Zeus’ Cave-Sanctuary, Meze in a Mountain Village Travel to Lassithi Plateau Tour historic sites with a local expert Optional tour of Zeus’ cave (a hour hike up an ancient stone pathway at a leisurely pace) Meze in a gorgeous mountain taverna with outdoor wood burning oven. Coffee or tea break in a taverna shaded by an ancient plane tree, where famous Cretan writers met for symposia Hands-on cooking class followed by our farewell meze. |
