DAY 1
    Breakfast, followed by an introduction to Cretan Diet and Mediterranean Diet
    Wild greens in Cretan cooking. We will pick up greens and herbs from the gardens and prepare salad, a meat based     
    stew and fricassee with seafood.
    Dips: the art of preparing a number of dips such as aubergine, tzatziki and tarama. and the group will be given the
    recipes for at least 20 more impressive dips to impress their friends.
    Tasting dips. The culture of meze
    A brief discussion on the Mediterranean tradition of meze, tapas, kemia… its role and basic techniques.
    Preparing 3-4 meze dishes plus the pastry of the day (Nerates with honey)
    Wine appreciation, Cretan white wines
    Dinner party with dips, meze, main courses  

    DAY 2
    Breakfast
    Visit to “Laiki”(local open air market). Shopping for fresh vegetables and fish
    Cooking vegetables, and fish
    Vegetable dishes: Aubergines, courgettes, tomatoes, pepperoni, potatoes, herbs
    Cooking stew and briam in the oven
    Cretan risotto and pasta dishes
    The herbs and spices
    Tasting vegetable dishes
    Cooking fish with vegetables “en pappiyote”
    Dessert of the day: Yoghurt with fruits in syrup and honey
    Dinner Party. Wine appreciation: Rose wines, the favorite wines of Cretan cuisine

    DAY 3

    Cheese and spinach pies
    Moussaka
    Beef stifado
    Lamb giouvetsi
    Dessert of the day: Karidopita with kaimaki ice cream
    Dinner party:  Wine appreciation: Dessert wines

    DAY 4
    Breakfast
    Visit to Ieraperta to buy fresh fish and seafood
    Fish soup “Mochlos” style and variations
    Cooking prawns
    Kalamari
    Cuttlefish  
    Marinating sea bass
    Pastry of the day: Pears poached in Mavrodaphni wine with vanilla ice cream
    Dinner Party.

    DAY 5
    Breakfast
    Marinades
    Lamb fricassee
    Baked leg of pork
    Pork & celery
    Pastry of the day: Yoghurt and honey mousse with home-made pasteli
    Dinner Party. Wine appreciation: Red wines
    A brief review of the courses

    DAY 6
    Breakfast
    Discussion about the course and the holiday. Presentation of certificates, notes with recipes, book by N. Psilakis and
    commemorative apron.
